Quick & Easy No-Bake Amish Granola Bars

These No-Bake Amish Granola Bars are the perfect solution!
They’re packed with wholesome oats, peanut butter, and a touch of sweetness from honey and brown sugar, making them a delightful treat. You can even customize them with your favorite add-ins like chocolate chips, raisins, or nuts. Let’s dive in!
Ingredients:
- 3 cups rolled oats
- 1 cup peanut butter (or almond butter)
- 1/2 cup honey
- 1/2 cup brown sugar (packed)
- 1 tsp vanilla extract
- 1/2 tsp salt
- 1/2 cup chocolate chips (or raisins, or your favorite mix-ins)
- Optional: chopped nuts, dried fruit, or shredded coconut
Instructions:
1. Prepare the dry ingredients: In a large bowl, combine the rolled oats, salt, and any optional ingredients you like (chopped nuts, dried fruit, or shredded coconut).
2. Melt the wet ingredients: In a medium saucepan, melt the peanut butter, honey, and brown sugar over medium heat. Stir occasionally until the mixture is smooth and well combined.
3. Add vanilla: Once smooth, remove the saucepan from the heat and stir in the vanilla extract.
4. Mix everything together: Pour the peanut butter mixture over the dry ingredients. Stir everything together until the oats and mix-ins are evenly coated.
5. Add your chocolate chips (or other mix-ins): Stir in the chocolate chips, raisins, or whatever mix-ins you’ve chosen.
6. Press into pan: Transfer the mixture to a greased 9x9-inch baking pan or one lined with parchment paper. Press down firmly to make sure the bars stick together.
7. Chill and set: Refrigerate the bars for at least 2 hours or until firm.
8. Cut and enjoy: Once set, cut the granola mixture into squares or bars. Now it’s time to enjoy your no-bake, homemade treat!
